I found this awesome blog through Pinterest and tried Andie’s mashed sweet potato recipe and it came out great! I modified her recipe since I was only creating for one. Click to ready my modified version.
- 1 sweet potato
- cinnamon sugar
- whipped butter
- almond milk
- 1 pot
- Peel your sweet potato and chop into small pieces
- Put 1 sweet potato in a large pot and add just enough cold water to cover them. Bring to a boil and cook until fork-tender, about 15 minutes.
- Add a pinch of regular salt, cinnamon sugar and half a teaspoon of whipped butter as well as 2 tablespoons of vanilla almond milk.
- Smash potatoes with fork and enjoy!
